The terroir
Château Trillol’s white wine is grown mainly in the terroir of La Bergerie (Termenès).
White wine – vinification
As soon as they arrive at the winery, the grapes are separated from the stems and rapidly pressed to conserve their freshness. Slow fermentation (2-3 weeks) at very low temperature (8°C) after gentle pressing and cold-settling. The wine is aged in vats on the fine lees for 3 months. The lees are stirred up ever week.
